Aka Throw-Whatever-You-Have-In-a-Pot soup.
Super versatile and with about 1,000 variations out there, here’s the basics:
1 TBS butter or olive oil
1 white or yellow onion, chopped
1 pkg sausage or kielbasa (I like chicken apple, or chicken garlic, but do whatever makes your heart happy)
1 tsp crushed garlic
2-4 cups broth (chicken, beef, or vegetable)
1 can great Northern beans, in juice
1 head of kale, roughly chopped
Salt and pepper to taste
Heat oil in a large pot, Add onions and sauté until soft. Add the sausage and garlic. Brown throughly. Add broth and beans. Cover and let simmer. Just before serving add the kale, salt and pepper.
Additions: quinoa, frozen corn, canned tomatoes, fresh carrots, potatoes…really anything you have that sounds good, just throw it in!
